TURMERIC LEMON BROTH WITH CORONA BEANS
SERVES 6 TO 8This is the soup you want on your bedside or couch when your body is craving something warming and, dare I say, healing. The combination of anti-inflammatory–rich turmeric with refreshing vitamin C–rich lemons in a gorgeous broth . . . is nourishing on so many levels. During the winter, I love adding roasted chestnuts for added bite.
2 cups dried corona beans*
2 tablespoons coconut oil
1 sweet onion, chopped
3 cloves garlic, minced
1 small bunch of chives, sliced diagonally
1 teaspoon red pepper flakes
Pinch of sea salt
Freshly ground black pepper
2 cups vegetable stock
2 cups filtered water
3 tablespoons white miso
2 lemons, thinly sliced
1-inch fresh turmeric, peeled and grated
1 pound fresh chestnuts,* roasted (optional; see “Roasting Chestnuts”)
Juice of 3 lemons
Garnishes: additional chopped chives, a dollop of Cashew Cheese, a dash of red pepper flakes, chopped fresh mint and/or cilantro, drizzle of olive oil, honey
